Do not adjust your screen. You are not imagining things. This week’s menu plan is almost exactly the same as last week’s. Why? Because, life. My husband worked late every night last week, I went out dancing two nights, and that made the big batch of soup that I made on Monday stretch pretty much all week long.
This weekend was a little strange – rain and snow (in the mountains) in May in Southern California? We had the last of the soup on Saturday evening, and I had a meeting on Sunday for an upcoming dance event, so we just in the restaurant that we were meeting at. One thing is for sure – the grocery trip sure was easy. We pretty much didn’t use anything that I purchased last week, so we needed just a few extra items (like coffee, and milk so I could make yogurt) and that was it. I’m starting a 21-day challenge today, so I also stocked up on a few healthy snack items, like pre-cut veggies and some almonds that I could take to work to keep the 3pm munchies at bay.

Tuesday: Ginger Chicken & Veggies from Sunday (from Against All Grain: Meals Made Simple by Danielle Walker)
Wednesday: Beef Stroganoff with leftovers from Monday’s roast
Thursday: Simple Shepherd’s Pie
Friday: out
Saturday: leftovers
Sunday: something smoked or grilled (or out)
