Meal Plan Monday – Apr 24

With all the traveling I’ve been doing over the last few months, I’ve gotten really tired of eating out. There are times when I am tired of cooking, but I’m definitely ready to get back to eating healthy again. Over the last two weeks I’ve also been sick, so despite the fact that I created a meal plan, there hasn’t been much cooking – mostly a lot of soup. Thankfully my plans had included mostly items from the freezer so that I could re-plan meals for this next week.

When don’t feel like cooking, one of my go-to meals is a pound of ground beef, a packet of brown rice and quinoa, and frozen vegetables. I just brown the ground beef, season with Montreal steak seasoning, warm the frozen veggies, and add the warmed brown rice and quinoa. When I’m sick, I definitely crave chicken soup from Lourdes Mexican food. It’s chicken, rice, onion, cilantro and avocado. Usually, I just have them put in chicken and rice, though. Add in one of their yummy (and huge) flour tortillas, and I’m good. I think I had that for dinner twice last week. Yesterday I was finally feeling back to normal so I can actually function again this week, including working out in the mornings again.

Sunday’s dinner was pulled pork that Gary smoked in the afternoon. Good news? That means that we have leftovers for Monday night’s dinner. They way Mondays usually go, leftovers are always my preferred choice.

This week’s meal plan:

Monday – leftover pulled pork
Tuesday – Pressure Cooker Summer Italian Chicken
Wednesday – Beef Tacos (Against All Grain: Meals Made Simple)
Thursday – Slow Cooker Chicken Curry
Friday – Spaghetti (with spaghetti squash)
Saturday – out or leftovers
Sunday – our anniversary, so likely dinner out

    Stopping by from orgjunkie. Dinner sounds yummy. So sorry that you have not felt well. Don’t you just love the Chicken Curry. I can not remember where I got the recipe, an online freezer meal, but I LOVE it!

      In high school, I was in charge of making dinner one night a week. I used to make chicken curry a lot from a heart-healthy cookbook until family members told me I needed to change it up a bit. 🙂 I didn’t make it for quite a while after that, but I definitely love this version! There’s an Instant Pot Butter Chicken recipe that I’ve seen people rave about, too. I might be making that soonish!
