Menu Plan Monday – May 9

We had a few changes in plan last week – some meals skipped because we had leftovers instead, and my husband decided to smoke a pork loin on Sunday night instead. We had my Mom over for dinner, and I made artichokes from our garden, zucchini, and strawberry shortcake with fresh whipped cream for dessert.

Thankfully this coming week is fairly normal. One thing I’m starting to learn is that planning 3 meals a week seems to be just right. (That is, unless I start taking leftovers to work again, which I need to start doing.) If that’s the case, I think adding one more meal should be good as most of the meals I cook serve 4-6 so we usually have plenty left over. Also, I’m definitely still loving the leftovers on Monday idea!

This week’s menu plan:

Monday: Leftovers

Tuesday: Chicken Fricassee (still haven’t made this yet – hopefully I’ll get to it this week)

Wednesday: Pot Roast

Thursday: Leftovers

Friday: Out

Saturday: ? Maybe out, maybe leftovers

Sunday: Simple Shepherd’s Pie
