Menu Plan Monday – May 30 (Paleo/Primal wk 3)

After a week away from “normal” life due to jury duty last week, I’m definitely ready to be back in my normal routine again. (Or as normal as it can be when the first day of the week is a holiday!) I did menu plan last week, and since the courts get out much earlier than my work does I even had some extra time in the evenings to cook.

This week I’m still planning paleo/primal meals, and I can definitely feel and see a difference after eating this way over the last couple of weeks. I did spend most of my day off sewing, so when I went to make breakfast this morning it occurred to me that I never went to the grocery store this weekend. Oops! Thankfully I was able to put something together for breakfast (Almost Oatmeal), and I had salad greens plus some leftover meat for lunch – so I can just swing by the store on my way home tonight to be ready for the rest of the week.

Here’s this week’s menu plan:

Monday:
Breakfast: Out
Lunch/Dinner: you’re on your own/leftovers

Tuesday:
Breakfast: Almost Oatmeal
Lunch: Leftovers
Dinner: Easy Greek Chicken (this keeps getting bumped forward each week – still haven’t made it yet)

Wednesday:
Breakfast: Warm Banana Coconut Bowl
Lunch: Leftovers
Dinner: Rosemary Dijon Pork Chops (from SavingDinner.com‘s menu plan)

Thursday:
Breakfast: Smoked Salmon and Fennel with Dill
Lunch: Leftovers
Dinner: Baked Chicken Thighs

Friday:
Breakfast: Hard-boiled Eggs
Lunch: Leftovers
Dinner: Out

Saturday:
Breakfast: Eggs?
Lunch/Dinner: We’ll be at the county fair, and I’ll be trying not to eat All. The. Junk food!

Sunday:
Breakfast: Out?
Lunch: you’re on your own
Dinner: Danish Meat Loaf

Monday: Beef Tacos (Against All Grain: Meals Made Simple – affiliate link)
Tuesday: Kale, Sausage and Potato Soup  (from SavingDinner.com‘s menu plan)
Wednesday: Leftover soup
Thursday: Leftover tacos (beef tacos and leftover smoked chicken)
Friday: Out
Saturday: Smoked pulled pork (My husband’s recipe. Though I’m working on getting him to write these down so I can share.)
Sunday: Out
