Ham and Mixed Bean Soup (Instant Pot)

I found a variation of this Ham and Mixed Bean Soup recipe on Facebook, but couldn’t bring myself to use the ham flavoring packet that came with the bag of mixed beans once I read the ingredient list. (Hint: not a lot of real food in that packet, let me tell you.) Enter the chicken broth I had in the freezer. And, yes, I put it into the Instant Pot frozen. I didn’t need to soak the beans, either.

After about an hour, the soup was perfect! Serve with saltine crackers (my husband’s favorite) or a loaf of crusty bread.

  1. Sautée mirepoix in ghee until onion is translucent. Add garlic, 2 bay leaves, leftover ham, 1 pound of mixed beans, water and chicken broth.
  2. Set Instant Pot to 41 minutes, high pressure. Natural release. Find the bay leaves. Salt and pepper to taste. Stir and enjoy!
